How Do I Get Started?

I recommend doing a timeline for your event and can help to visualize your celebration. Determining a format (i.e. buffet/ sit down meal/ family style, etc.) helps to define your food, rental, and service needs.  Choosing a location, setting a date  and an invitation list are important follow-up questions.  Any auxilliary catering services such as florists, musicians, photographers, wedding cake providers, etc. can be scheduled into this effectively.

Sample timeline for a wedding

2 pm catering staff arrives

4 pm ceremony begins

4:30 end of ceremony Bride and groom photography

4:30- 5 Guests locate seating (if assigned)  greet, and go to the bar

Note:  I generally recommend 5 appetizers per hour (one different selection for every 10 minute period approximately)  and I  recommend an appetizer table for parties over 50 people as it facilitates better access to the food.

6 – 7:30 pm Dinner

7:30 Toast

note: this is a busy time for caterers as we breakdown the buffet, clear the dishes, and begin setting up the dessert table.  I recommend the toast at this point to mitigate the disruption of the clearing and to give people a chance to digest their food.

8:30 dessert and coffee (cake-cutting ceremony)

9 pm Dancing

9-11 pm clean-up for the staff
